Over 16 years of honing his skills in his Family’s kitchen and 6 years in the Food Industry, Colin Enslin saw there was a gaping hole in the local food scene. What he saw was a lack of Authentic Mexican joints, offering unparalleled flavors, availability and affordability.
He sought to fill the void by building a taco cart that stays true to its humble origins on the streets of Mexico City, while offering service unmatched by any local restaurant, food truck, or caterer. After 2 years of R&D, Colin (aka Coco) decided Columbia, MO was ready for a fresh twist on a stale industry. On September 1st, 2017 Coco’s Tacos was officially open for business, setting up shop at the corner of MU campus at 9th and University. Word quickly spread across town of the Taco Guy at the corner of campus, but almost as quickly as it came, the taco cart vanished along with the warmth. Winter had come.
Settled in for a harsh Winter, Colin spent his days creating new recipes and finding ways to make Authentic Mexican Flavors more available. Working with local manufactures and retailers, he set up the framework for his newest project, 50 Shades of Salsa. An ongoing idea since the conception of Coco’s, the cookbook would consist of more salsas than you new existed, original recipes, and many tips/tricks of the trade. The Cookbook along with several different salsa will be available at many local retailers in Spring 2018.
