the chef favorite this week? this crunchy thai salad with cabbage, cilantro, sweet peppers & grilled chicken!

our thai chicken marinade is always a crowd-pleaser, and we’re excited to share it with you today! even when thai grilled chicken isn’t on the menu, you’ll be able to enjoy this at home with your families. let us know if you give this original recipe a try.

thai grilled chicken:
1 lb chicken breasts, trimmed
1 lb chicken thighs
- marinade:
1/2 cup olive oil (we love avocado oil, too!)
1.5 tbsp brown sugar
1 lime, zested & juiced
1/2 tsp fish sauce (oyster sauce would work too!)
1/2 jalapeno
1 shallot, peeled
3 cloves garlic, peeled
1/2 tsp red pepper flakes, onion powder, garlic powder, salt & pepper
add all marinade ingredients to a blender and pulse until just combined. add chicken to a large ziplock and pour marinade into the bag with chicken. seal the ziplock & gently toss to ensure all of the chicken is coated in the marinade. place in the fridge and allow to marinate overnight.

we recommend cooking this chicken on a hot grill or over med-high heat in a cast-iron pan on the stovetop! if you’re tossing up a salad, make a double batch of the marinade and set aside half to use as salad dressing! 😋
