I don’t think we talk enough about drinking in our industry. I’m really excited and terrified to share this video with you today . I’ve come to the point of my journey, personally and professionally, that I feel an ethical obligation to share with you my own struggles around alcohol and some of the methods that help.

I’d like to not only sell wine to you , but perhaps navigate a more honest and comprehensive approach of what we do, which recognizes the day to day realities of including alcohol as part of your life.

How I think about food & wine pairings goes something like this ….wine is the salt to your haricot vert, the lemon to your oyster.
1. ENHANCE the flavor profile of your food by pairing with a wine that compliments it’s“ essence” it’s innate nature , it’s green-bean-ness.
2. How do you do that ? By MATCHING. salt with salt . earth with earth. fruit with fruit. Muscadet mirrors the creamy body, acidity, salinity and the citrus we love to pair with oysters.
Three Tips For Choosing Obscure Wine Varietals.
1. Have a handful of more common varietals in mind that you usually like so you can reference them when speaking with your Sommelier or wine shop sales person.
2. Climate Matters. Look for diurnal temperature shifts in your wine regions. Cool nights and warm days keeps grapes fresh with lowered alcohol levels.
3. Get adventurous and curious. A total fail is valuable information to have and will inform your next move. If you know what you don’t like, try the opposite next time . How do you know what the opposite is? Ask us!
