At Wiens Cellars, we embrace the diversity of grape varietals🌱 The kaleidoscope of grapes offered in our climate allows us to shine a spotlight on lesser-known gems & embark on exciting grape experiments.

Of course, the more wine you drink, the more you become familiar with such grapes. For those new to wine, they may all be out of the ordinary! Some lesser known single-varietals we have on our current menu range from Vermentino to Dolcetto, with others to rotate out as they taper off.

This begins with the men that make it here! Our winemaking team is young & innovative; Always looking for what's next, yet fueled by the traditions that molded the art of winemaking from the very beginning! Cheers to their hard work & creativity that fills your glass of curiosity 🍷

Dolcetto, meaning “little sweet one” in Italian, is ironically found to be tart with black fruit characteristics & robust tannins. Our 2019 vintage was intentionally made with 100% Waxman Vineyard Dolcetto, imparting bold notes of cardamom & baking spices.

While we ferment our Dolcetto to dryness, the sweet cherry candy notes suggested in the name give this wine a nice contrast to it's bright acidity.

If you’ve never tried this varietal, believe us— You’ll want to. Visit our Tasting Room to sip on this NEW addition to our menu 🍷

As the name suggests, our Bare Knuckle Petite Sirah holds no punches! Spicy cracks of black pepper hit your senses, building into a dense blueberry core. A full, heavy bodied tannin structure lays out the finish with notes of vanilla bourbon lingering on the palate. This 2020 vintage is no exception.

With the cooler weather, Fridays now require a healthy pour of a delicious red… We’re choosing our NEWLY RELEASED 2019 Aglianico 🍷

With notes of dried orange peel & fig, full tannins linger on the palate in only our second vintage of this single-varietal Aglianico. This wine is grown in our Hendershot vineyard, in the Eastern hills of Temecula Wine Country. Deep body, firm tannins & nice acidity make this a very food friendly wine.

The recent temperature fluctuations have caused some delays in fruit, but our Winemakers are excited for what’s to come. Patience is key this time of year to ensure our wines reach their full potential with each varietal’s typicity.

What we have already picked has graciously stood up to our standards of quality & integrity. Plus, our Dream Team is always making sure to have fun along the way!

We may be getting caught up in the celebration of it all, but let's not forget what California Wine Month is all about: The WINE 🍷 Each region of this beautiful state holds their own expression of unique terroir. Temecula Valley has varying ranges in between the Valleys & the hillsides spanning Southern California. This wine in particular, stems from those gentle breezes that wisp through our Waxman Vineyard.

The Waxman vineyard is planted in the middle of the La Cresta area of the Temecula Valley AVA. The cabernet is grown in a relatively flat area, with well draining, sandy loam soils, and is planted next to mature eucalyptus trees, which occasionally impart a hint of eucalyptus, or herbaceous notes in the wine.

Our 2019 Waxman Cabernet Sauvignon has been awarded BEST OF CLASS + 95 pts from the 2023 LA International Wine Competition, expressing woody aromas reminiscent of pine & juniper, complemented by notes of red currant, toffee & leading into fine grain tannins on the finish. This vintage will best pair with Grilled Premium Cuts of Beef, Osso Bucco & Braised Short Ribs.

2019 Obscura 🎞
• Notes of Black Cherry, Cracked Pepper, Elegant Finish | Bold, smooth & to the point. This wine will never let you down when choosing the perfect movie to watch under the stars. Pair with some dark chocolate treats & you may just want to make it a double feature.

2022 Fiano 🥗
• Notes of Fresh Pineapple, Nectarine, Floral | This Italian varietal is notorious for complimenting fresh fruits & vegetables, seafood & creamy pasta dishes. Drink it while you cook (smooth tunes preferred), splash it in your recipe & if there's any left, with the meal as well.

2019 Unforgiving 📚
• Notes of Strawberry Rhubarb, White Pepper, Firm Tannins | Complementing that perfect summer read. Taking you deep into any novel you choose, this wine should be savored until the very last drop. Selfishly keeping it for yourself is not only appropriate, but encouraged.

While we love the character & terroir of our local vines, we love the opportunity to make wine with fruit from other famous California AVAs. This Cabernet was harvested & immediately transported to our facility to be crushed by our Winemaking Dream Team! The quality & chemistry of the fruit that we received was remarkable & we knew that we could make this into a truly special wine. We are very pleased with the result & the chance to put our own spin on this beautiful, elegant 2020 Paso Robles Cabernet Sauvignon.

Released today & freshly poured by our winemakers during our exclusive Cellar Room Tastings this afternoon. Displaying great elegance & freshness on the palate, a bramble of raspberry & blackberry burst from the glass, while displaying notes of rose petal & fine herbs. Sophisticated, with a subtle air of Tahitian vanilla, our 2020 Paso Robles Cabernet Sauvignon is ultimately distinguished by a long, nuanced finish.

Aromas of pineapple and lemon zest enchant the senses before pink grapefruit and almond enrich the palate, with a touch of minerality completing the picture on this hand crafted, stylish Italian varietal 🥂

The 2022 Vermentino is a wonderful example of how well this Italian variety does in Temecula, with a nice balance of crisp, refreshing acidity and light fruit aromas. This vintage has been awarded BEST OF CLASS in both the San Francisco Chronicle and Los Angeles International Wine Competitions, and DOUBLE GOLD in the Orange County Wine Competition 🏅✨

Amid our collection of vineyards held up high in La Cresta, lays our exquisite Waxman Vineyard. Discovering this piece of land nearly 20 years ago began our loyal love affair with these hills tucked away in our Valley. The Cabernet grown here is in a relatively flat area, with well draining, sandy loam soils, & is planted next to mature eucalyptus trees, which occasionally impart subtle herbaceous notes in the wine.

Showcasing notes of Red Currant & Juniper, leading into Robust Tannins on the finish, our winemaking team has astonished even the most particular of palates with this vineyard, once again. Receiving BEST OF CLASS + GOLD MEDAL + 95 POINTS in the 2023 LA International Wine Competition has made our 2019 Waxman Cab a must-try in our Cellar Room 🏅 Currently on menu & currently waiting to be tasted by you.

Summertime & the [wine] pourin' is easy 🍷

The season for lounging, exploring, resting & outdoor socializing is here. Nobody does that quite like Temecula Valley, but when have you ever left the winery without bringing a bottle home with you? That's what we thought. These wines are for those times. Picked by our Winemakers, just for you to try with your favorite summer activity. Details below.

2020 Crowded ☀
• Notes of Bing Cherry, Italian Plum, Vanilla Bean | Pairs well with any course you may serve at your next BBQ! Everyone will love it. We promise.

2019 Barbera 🏕
• Notes of Black Raspberry, Tart Cherry, Ginger | Perfect for cozying up around the campfire with your buds, eating smores & rocking out to that one guy's guitar.

2021 Solace 🏖
• Notes of Apricot, Kiwi, White Peach | Great on its own or with a wide array of beach snacks that you always pack too much of. Bonus Note: Drank best with your toes dug deep in the sand.
